I recently received a SAR V3 as a gift, and I'm looking for a suitable setup. This is going to be a grab-and-go medical rig for me. I'm curious if anyone has used one of these as a medic. I'm trying to figure out if I need to order any interior pockets or anything like that.

I would start by working backwards- What else will be carrying in this before you stock with medical?

I use the Kit Bag as the base for all else, and it rarely leaves my body while out and about. So, the loadout in my kit bag never changes, and is very personally focused. Mine always has pistol, flashlight, Leica LRF, compass, whistle, nail clippers, matches, lighter, Leatherman Skeletool, TP, and hunting license. It really doesn't have room for much else.
I do have a couple bandaids in the front pocket, but my main medical supply is in my backpack which actually has the room needed for comprehensive medical kit.

The SAR mission is geared towards more comprehensive medical kit than will fit in an SAR/Kit Bag.

Maybe a better way of putting this is: I exist out of the kitbag, I work out of the backpack.
